Eh, scratch the above, or at least some of it.

The built-in in-place alternative %prep is indeed exactly that one symlink that is currently hardwired in the code. And thinking along that path is exactly how I landed on the %prep -a idea, but I think talking about it in terms of an alternative makes it easier to explain/understand. It also would be cleaner in some ways at least.
