[Rpm-maint] [rpm-software-management/rpm] Avoid special characters from %{VERSION} in %builddir (PR #3160)

I considered doing it in the macro expansion in %{lua} but this actually seemed simpler in this context.

...until the next morning when you wake up and realize what the distant chime in your head was: we have these special string utility shortcuts from cad5affacdaa8094c8850d087bafe4f195b926af, so %gsub would've probably done the trick. Oh well.
