After a few nights' sleep: I think I prefer having the all the version information in the cmake itself, if only because that's where you expect it to live. If I grab an upstream project and mess around with it, that's where I'd be headed to set some local version indicator, and be mightily confused if it was not there. And, it makes those production builds more straightforward and predictable, which is what you want for such builds.
